โA lot of people shy away from the high quality fermented foods because they can be quite costly. I'll just refer people to a resource in Tim Ferriss' book, The 4-Hour Chef. He actually gives an excellent recipe for making your own sauerkraut, which basically involves cabbage and water and salt. But you have to do it properly because you can grow some, not necessarily lethal, but some somewhat dangerous bacteria if you don't scrape off the top layer properly. But he gives beautiful instructions for how to do this in vats.โ
